Quick Dinner Recipe that uses leftovers and is delicious too.

Not wanting to eat roti sabji for dinner and making a recipe dish that is different, is a challenge I battle every day. This quest for producing interesting dinner recipes led me to make this easy roti wraps that are not only delicious but full of veggies too. I am amazed how I can easily slip in all veggies that I want my child to eat and give it a fancy name. I named it, The Dinner Special Cheesy Mexican Wrap but you can choose to skip the cheese too. The best part it letโ€™s you use the rotis or parathas you made for breakfast or lunch. The internet is full of drool worthy recipes but sometimes they are too time consuming to make for dinner.

This is good way to clear your fridge of all the vegetables you have and you can experiment with the filling used in the wraps. You can even make a non-vegetarian recipe out of this by using boiled and shredded chicken. Additionally, you can use left over rotis for dinner to prepare this simple and easy recipe.

Here is what you need to make this quick, simple and healthy Mexican Wraps for Dinner.

Prep time -15mins

Cooking time โ€“ 15 mins

Total Time โ€“ 30 to 35 minutes

Ingredients required for this recipe are listed below

  • Left over or fresh rotis โ€“ 6 to 7 (I considered 2 rotis per person)
  • 1 cup boiled and slightly smashed rajma (kidney beans)
  • A big cup of finely chopped vegetables (I used mushroom, carrots, corn, cabbage, capsicum, finely chopped broccoli too)
  • 1 tsp grated garlic.
  • 2 spoons oil
  • Cubes processed cheese โ€“ 2 and grated.
  • A little butter to smear on the roti wraps
  • Salt, Pepper and Oregano for seasoning.
  • 4 Tsp of tomato ketchup to spread on the rotis

Method

Heat oil in a pan. When the oil heats up add the grated garlic. Now add in all the chopped vegetables and stir fry them for about 5 to 7 mins till they are soft and tender. Now add in the boiled rajma and add in the seasoning. Mix and cook well for another five minutes till the water from the vegetables dries up. Turn off the gas.

Once the vegetables cool down. Take a roti, spread some ketchup on the rotis, 2 heaped spoons of the vegetable stuffing and put it on the roti. Now spread some cheese over it. Now roll the roti like a tortilla or a roll and cook on both sides till the roti turns crisp. Repeat the same with other rotis too. Your delicious roti wraps for dinner are ready. That’s all to this recipe ๐Ÿ™‚

Tip: You can even add some scrambled egg to your filling or add some boiled or shredded chicken. You can even grate some paneer over the vegetable too.
