I am confident that the last two months of the lockdown have had some impact on our entire being.Therefore as a result, we have eaten food that we otherwise refrained from. Well, you can blame it on the ever changing hormones and the stress that quarantine bought with it. Come the month of June, I decided to dig my pantry for something healthy and wholesome. Finally, the search led to this easy,tangy and delicious salad being prepared. Additionally, this recipe is my favorite for days when I intend to invest less time in the kitchen.
The amalgamation of sweet, spicy and fresh flavors is what makes this salad one of the family favorites.The best part about this salad is that you can add and omit the food items you want. 🙂 While you are chopping the ingredients, one of these hacks may help you.
Preparation Time – 15 minutes
Total time – 20 minutes.
Ingredients for the salad
Serves 2 (multiply for more)
- 1 cucumber, chopped
- A big cup of boiled chickpeas
- 1 tomato finely chopped
- ½ bowl of boiled corn
- 2 handfuls of fresh coriander leaves, chopped
- 2 big teaspoons
- ½ Cup pomegranate seeds ( replace this with raw mango pieces)
- 1 green chilli finely chopped
- ¼ cup of crumbled cottage cheese ( substitute this feta cheese if you like)
- 1 tablespoons olive oil
- 1 tablespoon of lime juice
- pinch rock salt
- freshly ground pepper
- 1 tsp chaat masala, optional
In a bowl place all the ingredients together all the ingredients, adding the cheese last. Drizzle the olive oil and season with salt, pepper and chaat masala.
You can serve it as it is or add some chutneys to it. You can even skip adding the cottage cheese and add well beaten and slightly sweetened curd to it.
This food recipe, let’s you even involve kids. While making the salad, you can have the kids help you add in all the ingredients and mix it too.
