Easy to make Zucchini Paratha.

As a parent one of the most important thing that is always on my mind, after my child, is meals! We are constantly worrying about food. We join various groups on social media to talk and learn about food. We look for ways to include different food items in our child’s diet. We even compare our kids with other kids who eat a few more items than our own kids. One thing that I have come to realize over time, is that kids will eat when hungry and the presentation of food definitely helps when it comes to getting kids to try something new.

I have often had my child come home and tell me he would like to eat a particular thing because his friend was having it. This is another way of getting kids to eat because kids ape other kids. So you can even plan fun food dates with your child’s friends and get them to share different varieties of food.

A simple and easy to make recipe that you can easily make moderation to is Zucchini Paratha( flatbread) I often end up adding cheese, cottage cheese, potato, broccoli to this and make different shapes of parathas. We have had occassions where the bub has very conveniently kept aside veggies served with rice, so parathas are always an easy way of feeding different veggies.

Here is what you need for this Paratha.

  • One Zucchini, washed and grated
  • One cup wheat flour, you can even make it gluten free by using other flours. Take additional flour for dusting.
  • 1 Tsp Chilli Powder
  • 1/2 Tsp Coriander Powder
  • 1/2 Tsp Cumin Powder
  • 1/2 Tsp Chaat Masala
  • 1/2 Tsp Turmeric Powder
  • Salt for taste
  • I even added grated carrots and some boiled and mashed broccoli.
  • Water or milk for kneading the dough. ( As needed)
  • Ghee or oil for greasing the dough and making flatbreads.

Method

Take all the ingredients except the flour in a big bottomed pan. Mix well. Now add the flour and mix well. The grated vegetables will leave water on adding the spices too. Mix well so that the vegetables and flour starts coming together as a dough. Now slowly add 2 to 3 tsps of milk or water and keep mixing till it forms a soft dough. Grease the dough Cover and keep aside for mins.

Now make small 3 cm balls of the dough. Dust some dry flour on a flat and clean surface. Roll the balls into a flat circle ( like a roti) Fold it into half and then into a triangle shape. Dust some flour and roll again.

Now heat a pan and drizzle half a spoon ghee. Cook the rolled paratha until brown spots appear on both sides. Apply some more ghee or oil. Your paratha is ready. You can serve it with pickle, curd or eat as it is.
