Getting your picky kids to eat everything is what we always strive to do. What to eat and what to make for snacks is every second person\u2019s troublesome saga. I often prepare a <strong><em><a href=\"https:\/\/decodinglives.com\/2019\/12\/09\/easy-meal-ideas-to-get-through-the-week\/\">weekly meal plan<\/a><\/em><\/strong> which helps me reduce my mealtime worries. I often prefer <strong><em><a href=\"https:\/\/decodinglives.com\/2020\/07\/09\/one-pot-meal-to-save-your-day-days\/\">one pot meals<\/a><\/em><\/strong> that go well with chapatis or rice. Additionally, I love experimenting with <strong><em><a href=\"https:\/\/www.instagram.com\/p\/CCiIomzF5Tn\/?utm_source=ig_web_copy_link\">leftover food<\/a><\/em><\/strong> and give them a makeover.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img src=\"https:\/\/decodinglives.com\/wp-content\/uploads\/2020\/08\/food.png\" alt=\"\" class=\"wp-image-3557\"\/><figcaption><strong>A lovely spread of food.<\/strong><\/figcaption><\/figure><\/div>\n\n\n\n<p>If you ever happen to stumble upon the \u201csaved\u201d field of my social media profile, you will come across many meal and snack recipes. Most of these recipes include an idea or two on how present and offer food to a pick or fussy eater at home. One of the bloggers\u2019 I follow shares some <strong><em><a href=\"https:\/\/www.instagram.com\/momfunda\/?hl=en\">amazing tips and ideas related to kid\u2019s nutrition and health<\/a><\/em><\/strong><\/p>\n\n\n\n<p>Usually, the little booboo\u2019s meals are set. When it comes to making the fussy eater, eat veggies, I add them in pureed or grated form. I add them to parathas, rice, daal and cutlets. Necessity is the mother of invention. Hence, this particular breakfast cutlet is a recipe derived out of necessity. &nbsp;<\/p>\n\n\n\n<p>Here is what you will need to make this leftover rice cutlet. It is approved by fussy eater and he ate it for breakfast and lunch too<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img src=\"https:\/\/decodinglives.com\/wp-content\/uploads\/2020\/08\/image-11.png\" alt=\"\" class=\"wp-image-3556\"\/><\/figure><\/div>\n\n\n\n<h3><strong><u>Ingredients<\/u><\/strong><\/h3>\n\n\n\n<ul><li><strong><em>1 cup leftover cooked rice<\/em><\/strong><\/li><li><strong><em>2 boiled and grated potatoes<\/em><\/strong><\/li><li><strong><em>1 cup finely chopped veggies of your choice<\/em><\/strong><\/li><li><strong><em>(I used \u2013 grated carrot, corn, beetroot, spring onion greens and capsicum)<\/em><\/strong><\/li><li><strong><em>1 tsp pepper<\/em><\/strong><\/li><li><strong><em>1 tsp cumin powder<\/em><\/strong><\/li><li><strong><em>I used 1 tsp moringa leaves powder (optional)<\/em><\/strong><\/li><li><strong><em>Add 1 tbsp coriander.<\/em><\/strong><\/li><li><strong><em>3 tbsp sooji (rawa)<\/em><\/strong><\/li><li><strong><em>2 tbsp rice flour<\/em><\/strong><\/li><li><strong><em>Salt for seasoning<\/em><\/strong><\/li><li><strong><em>Oil or ghee for shallow frying.<\/em><\/strong><\/li><\/ul>\n\n\n\n<h3><strong><u>Method<\/u><\/strong><\/h3>\n\n\n\n<p>Take a big bowl and add everything together and mix really well. It should turn to nice soft consistency. Make sure everything is mashed and mixed well. Check seasoning as per taste.<\/p>\n\n\n\n<p>Now make cutlets of the shape you want. Heat oil or ghee on a pan for shallow frying.<\/p>\n\n\n\n<p>I used a non-stick pan and added 2 tsps. of ghee and shallow fried for 4 to 5 mins on each side on low flame.<\/p>\n\n\n\n<p>It can be stored in the fridge for a day. The bub had this for both his meals. You can add grated paneer, cheese or boiled eggs to it. Adjust the spice level as per your taste too.<\/p>\n\n\n\n<p>Believe me, cutlets are the easiest way to add veggies to the diet of your fussy eater. Additionally, the kids love the different colors of vegetables too.  You can even add oats to it.
