I absolutely love the days when I can slow cook chicken and turn a simple and easy recipe into a delicious chicken curry.

Ingredients for the 🍗
1kg Chicken cleaned and washed
2 Onions finely sliced
4 Onions and 3 Tomatoes
4 Black Pepper Corns
4 Cardamom Pods
2 Cinnamon Sticks
4 to 5 Pods of Garlic
2 Whole Red Chilies soaked in water
2 Bay Leaves
2 Heaped spoon of Coriander Powder
1 Heaped spoon of Red Chilli Powder
1 Tsp of Turmeric
3 Heaped spoon of Chicken Masala ( I used Shaan Masala)
1 Cup Curd
2 tsp ginger garlic paste
Coriander and Mint for Garnishing
1 tbsp lemon juice.
Take the clean and washed chicken and add in all the powdered spices. Add the ginger-garlic paste and the curd. Mix well to ensure it gets evenly coated on the chicken. Let it marinate for 30 minutes.
In a pan add oil, once the oil heats up add the whole spices. Now add the sliced onions. Saute them until they turn brownish. You can add a little salt here as salt helps the onion cook faster.
Now in a blender jar, cut and add 4 onions, 3 tomatoes, 4 pods of garlic and 2 soaked whole red chilies. Make it into a paste.
Once the onions have browned, add the ground paste. Fry well on medium flame. Once the oil separates, add the marinated chicken. Mix well.
Let the chicken slow cook on medium flame for about 20 mins.Keep stirring in between.
Once the entire mixture starts leaving oil and you see the oil floating on top, add water as per the consistency you require. Let it come to boil and cook for another 10 mins.
Garnish with chopped coriander and mint leaves. Add the lemon juice, give it a good stir and then switch off the gas as letting the lemon juice cook can make the dish bitter,
Serve with Rice, Roti or Paratha.🥘🍗🍲
Simple, Easy and You can skip adding water and add veggies to the chicken for variation.
