3 simple and quick recipes for Diwali.

Diwali itself means indulgence.Indulgence in food and happiness.The vibes of Diwali itself are endearing.You don’t need to belong to a certain sect or community to celebrate Diwali.

I have grown up experiencing the warmth, love and richness of Diwali.As I grew up on certain occasions I felt that we became too busy to celebrate Diwali with full fervour.

The times are such that in order to spend more time with family and enjoy the festival to the fullest, we tend to rely a lot on the store bought stuff.The fun of helping around the house in making things, packing things is slowly taking over by standing in long queues at the shopping malls.

Nonetheless, Diwali means delicacies and enjoyment and if you want to still have that “Ghar wali feeling” on Diwali, here are a few easy savory and sweet delicacies that you can whip up in a jiffy

Instant Chakli.

This happens to be my favorite as its quick to make and lasts long when stored in an air-tight container.Here is what you need.

1 cup rice flour

½ cup besan

1 tsp chilli powder

1 tsp zeera

1tsp sesame seeds

2 tsp crushed ajwain

1tsp haldi

Salt as per taste

3 tbsp ghee

1 tsp of baking soda

Hot water

Oil for frying.

Mix all the ingredients except oil and water.Slowly knead into a soft dough using hot water.Do not add too much water at one go.Let the dough rest for 20 -30mins

Now divide the dough into two parts.Put one part dough in the chakli moulds, make chaklis and place on the butter paper.Repeat the same with the rest of the dough.

Heat oil well, deep fry on medium flame till they turn brownish.Stain on a kitchen towel.Can be served immediately.

Namak Para

These turned out really yummy and can be enjoyed with Chai too.

1 cup maida

1tsp ajwain

1 tsp zeera

2 tsp crushed kasoori methi

50ml oil

1 tsp of baking soda

Salt as per taste

Warm water for kneading.

Oil for frying.

Mix all the dry ingredients well.Add the oil and mix it well till the mix is crumbly. Slowly add water and knead into a soft dough.Let the dough rest for 30mins.

Now roll the dough into a big chapati with 1 cm thickness.Cut small rectangular pieces and keep aside.

Heat oil in a pan, once hot, deep fry on medium heat till brown.Strain on a kitchen towel and serve.

Shahi Tukda

This is yummy, rich and gives you a very experienced chef types feeling too.To make this you will need.

7 to 8 bread slices.

¾ cup sugar

More ¾ cup sugar for the milk

2 cups water

1 litre milk

Ghee for deep frying

Sliced dry fruits for garnishing

Take the bread slices and remove the sides.Cut them into half in the shape of a triangle.

In a pan put the milk to boil, once the milk comes to a boil, reduce the flame and let the milk reduce to half.Add sugar and let it dissolve completely.Keep stirring in between.

In a pan boil water, now add sugar.You can add or reduce sugar as per taste, hence add sugar slowly.Make a sugar syrup out of it.Do not overcook it or else the sugar will get burnt.

Now heat ghee in a pan, deep fry the bread pieces.

Strain the bread pieces and dip them in the sugar syrup.Remove and place them on a plate.

Now pour the rabdi that is made out of milk, over the bread pieces.Garnish with sliced dry fruits. Serve when warm.

These three recipes are quick and easy to make.They need less ingredients and are delicious too.Do try them this Diwali and enjoy them to the fullest.

I haven’t tried replacing sugar with jaggery but you can.Be careful when adding jaggery to milk.The milk should not be very hot when adding jaggery as it may make the milk curdle up.If you do try with jaggery,let me know how it turns out to be.
